Changing school food and beverage environments: What is the fiscal impact

A fiscal impact analysis was conducted in a sample of California public schools to assess the economic impact of changing the school nutrition environment. This assessment was conducted as part of an evaluation of policies designed to improve school food environments by increasing access to healthy a la carte foods and beverages (foods and beverages sold outside the school meal program). An analysis of a la carte food and beverage sales and revenues was conducted at ten schools, including four high schools and six middle schools. Data was collected and analyzed from the following areas: vending machines sales and revenues, vending contract commissions and incentives, school store sales and revenues, food service a la carte sales and revenues, and school meal reimbursements and revenues. This information provides a basis for assessing the financial feasibility of instituting a la carte nutrient standards as well as the relative importance of income generated from a la carte food sales in the context of overall school finances.
